Label Rouge is a
designation and protocol developed in France which utilizes traditional
breed slow growing chickens in a free range environment to produce darker,
more flavorful meat.
Conventional
Cornish-cross broilers are lazy and literally fall apart and die after
nine weeks. We use Freedom Rangers developed from Brittany and Burgundy
and grow them to 13 weeks. When slow roasted, these birds produce
fantastic flavor and texture. The broth is absolutely exceptional.
We process all
broilers on the farm in the open clean air. Our production is limited.
